Tofu and Broccoli
Ingredients
FOR THE LEMONGRASS MARINADE
- 3 lemongrass stalks (white parts only), finely chopped (about 2 tablespoons)
- Consider using a cube of ginger if you don't have lemongrass.
- 4 garlic cloves, finely chopped
- 6 tablespoons soy sauce or tamari
- 4 tablespoons canola or other neutral oil
- 8 teaspoons sesame oil
- 3 teaspoons brown sugar
- 1.5 teaspoon ground turmeric
- 3 teaspoon red-pepper flakes
FOR THE STIR-FRY
- 1 (14- to 16-ounce) block extra-firm tofu, drained and cut into 1-inch cubes
- 1 yellow onion, halved and thinly sliced
- 1 pound broccoli, cut into small florets and halved
- Salt and pepper
- Big handful chopped cilantro or scallions
- Cooked rice, rice noodles or glass noodles, for serving
FOR THE TOFU
- 1 tablespoon avocado oil
- 2 tablespoon cornstarch
Instructions
THE DAY BEFORE:
Place the Tofu in the Tofu press and put it in the refrigerator
THE MORNING OF:
- Make the marinade
- Cube the Tofu
- Place the cubed Tofu in the marinade in a coverd bowl
- Remove the tofu from the marinade
- Bathe the tofu cubes in the cornstarch and avocado oil
- Place the tofu cubes in the air fryer and cook for 15 minutes at 400 degrees.
- Heat a wok or large (12-inch) skillet on medium-high for 2 minutes.
- Add the onions and cook until the onions have softened slightly, about 2 minutes.
- Add the broccoli, season well with salt and pepper, and toss.
- Add the fried tofu and reduce heat to medium, cover and cook for 2 minutes. Uncover, give it a quick toss and cover again. Cook for 1 minute or until the broccoli is just tender and still bright green.
- Top with cilantro or scallions and serve with rice or noodles.
